- Hot/cold holding temperatures excellent.
- No/minimal cooling.
- Reviewed that if vegetables are blanched (or hot vinegar brine used), then 7
day rule applies.
- Proper raw protein storage.
- Dishwashers both 50ppm chlorine; test kit provided.
- No evidence of pests.
- Remember to store medicines in designated place away from food and other
restaurant supplies.
- Chemicals labeled properly.
- Minimal food prep done in prep sink. It is cleaned and sanitized prior to use
for food, per PIC. Since this sink is not indirectly drained, do not leave any
foods unattended below flood level of sink.
- Salmon supplier now provides salmon frozen so no parasite destruction is done
on site - get Seafood HACCP letter from supplier stating that parasite
destruction has been done.
