  • Cooling Methods (3 point deduction). More info
    • Observations: VIOLATION OF SECTION 3-501.15 *PRIORITY FOUNDATION* Incorrect methods are used to cool potentially hazardous foods, specifically: a covered pan with beans in the large glass-door refrigerator was at 75-80°F -- put in about 1 hour before. Be sure to check to see that the product drops to below 70°F within 2 hours of putting into the refrigerator. Use shallow pans and do not cover until cooling process is complete -- see attached information sheet.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Potentially hazardous food shall be cooled by: 1) Placing the food in shallow pans; 2) Separating the food into smaller or thinner portions; 3) Using rapid cooling equipment; 4) Stirring the food in an ice water bath; 5) Using or arranging containers to facilitate heat transfer; 6) Adding ice as an ingredient; or 7) Other effective methods. Food shall be arranged to provide maximum heat transfer and loosely covered or uncovered.

Ware- washing machine working properly (measured 100 p.p.m. chlorine in the
rinse water).
Sanitizer solution in wiping cloth pail at correct concentration (measured
100- 200 p.p.m. chlorine).
Refrigeration units okay.
Hand- wash sink properly equipped and maintained.
