    • Observations: VIOLATION OF SECTION 4-501.114(A) *PRIORITY* The chlorine sanitizer concentration, pH, or temperature is not adequate, specifically: 0PPM CHLORINE IN BAR DISH MACHINE AFTER MULTIPLE CYCLES (TEMP TO 120F).
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Provide and maintain an approved chlorine chemical sanitizer solution that has a minimum concentration of 50 ppm at 75°F for water with a pH of 8 or less, or 100°F for water with a pH of 10 or less, or as allowed in rule. HAVE MACHINE SERVICED. I WILL RECHECK ON THIS ON MONDAY 10/2. DO NOT USE MACHINE UNTIL I HAVE COMPLETED A REINSPECTION. USE DISH MACHINE IN KITCHEN FOR ALL ITEMS.

- Burger temped off grill at 160F+.
- Hand sinks stocked and accessible.
- Sanitizer in buckets tested at 200- 400ppm quat. Test strips on site.
- Kitchen dish machine tested at 50- 200ppm chlorine. Test strips on site.
- Thin tip thermometer.
- Observed good handwashing practices.
- Observed good date marking practices with freeze and thaw dates.
- Discussed illness policy and exclusion.
- Discussed 8 major allergens and left fact sheet.
