  • Chemical Sanitizer, Chlorine (5 point deduction). More info
    • Observations: VIOLATION OF SECTION 4-501.114(A) *PRIORITY* The chlorine sanitizer concentration, pH, or temperature is not adequate, specifically: CHLORINE RESIDUAL AT 0 PPM IN KITCHEN DISHMACHINE & BAR DISHMACHINE.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Provide and maintain an approved chlorine chemical sanitizer solution that has a minimum concentration of 50 ppm at 75°F for water with a pH of 8 or less, or 100°F for water with a pH of 10 or less, or as allowed in rule. Action Taken: CHEF UNCLOGGED SANITIZER LINES IN BOTH MACHINES DURING INSPECTIION. THE CHLORINE RESIDUAL REACHED 50 PPM IN BOTH MACHINES.
  • Floors, Walls and Ceilings, Cleanability (0 point deduction). More info
    • Observations: VIOLATION OF SECTION 6-201.11 Floors, floor coverings, walls, wall coverings and ceilings are not designed, constructed and installed to be smooth and easily cleanable, specifically: PEELING PAINT AND DAMAGE TO KITCHEN CEILING.
    • Correction: REQUIRED CORRECTION: Floors, floor coverings, walls, wall coverings and ceilings shall be designed, constructed and installed so they are smooth and easily cleanable. REPAIR TO ENSURE CEILING IS EASILY CLEANABLE.


Inspection notes:
- per inspection on 08/08/2019 - consumer advisory provided for steak,
breakfast items, & burgers
- discussed 2 step cooling practices for chowder. Product should be cooled
from 135f- 70f within 2 hours and from 70f- 41f within 4 hours. Chef indicated an
ice bath was used for quick cooling then placed uncovered in cooler.
- Discussed employee illness policy and hand washing practices. Fact sheet
- Discussed new straw rule and provided fact sheet.
- Additional storage in back of facility contains 4 domestic freezers & one
domestic refrigerator (for bread only). All cold holding at 41f or below.
- Discussed allergens and provided fact sheet.
- Date marking practices - good.
