    • Observations: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: PORK IN CROCK POT AT 127F. CROCK POT HAS BEEN OFF FOR LESS THAN 1 HOUR.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Potentially hazardous foods shall be maintained at 135°F or above (except roast beef may be held at 130°F (54°C) or above) or at 41°F or less. Action Taken: PORK PLACED IN PAN IN OVEN TO BRING TEMP TO 165F. PORK PLACED BACK IN CROCK POT TO HOLD AT 135F OR ABOVE UNTIL SERVING TIME AT 7:00PM.

- Test strips on site. Bleach sanitizer tested at 50- 200ppm.
- Cold holding at or below 41F.
- Bathrooms clean, stocked, and accessible.
