    • Observations: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: ***See violation.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Potentially hazardous foods shall be maintained at 135°F or above (except roast beef may be held at 130°F (54°C) or above) or at 41°F or less. Action Taken: ***See violation.


This was a complete reinspection for a Failed To Comply. You passed with a 95.
The chef has set- up 4 different checklists to be used immediately to monitor
that the proper protocols are being adhered to in the kitchen. Excellent!
Hand washing sinks were setup and accessible.
Cold holding units 41F or less through out.
Thin tipped thermometer on hand. Chef confirmed all temperature readings with
in- house thermometer.
Hot holding 135F except where noted. Reheating protocols reviewed.
Proper separation of raw proteins through out.
Excellent date marking.
Time as a control in place.
Additional notes:
Water observed in the bottom on pantry cooler. Please check.
Do not store packaged berries in direct contact with RTE foods such as lettuce.
Prepping area on other side of hot line has been conditionally approved with
