  • Cleaning Procedure (5 point deduction). More info
    • Observations: VIOLATION OF SECTION 2-301.12 *PRIORITY* Food employees do not use the proper cleaning procedure for washing their hands, specifically: EMPLOYEE USED HAND SANITIZER INSTEAD OF FOLLOWING THE PROPER CLEANING PROCEDURE PRIOR TO PREPARING AN ORDER.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Food employees shall clean their hands by using a cleaning procedure of approximately 20 seconds that includes vigorous friction on the surfaces of the lathered fingers, finger tips, areas between the fingers, hands and arms for at least 10 to 15 seconds, followed by a thorough rinsing under clean, running warm water. Action Taken: DISCUSSED W/ STAFF AT TIME OF INSPECTION. EMPLOYEE WAS STOPPED AND ASKED TO WASH HANDS FOLLOWING THE APPROPRIATE CLEANING PROCEDURE.
  • Ready-to-Eat Food, Dating (3 point deduction). More info
    • Observations: VIOLATION OF SECTION 3-501.17 *PRIORITY FOUNDATION* Ready-to-eat food is not properly date-marked, specifically: ITEMS NOT DATED THAT ARE HELD MORE THAN 24 HOURS.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Refrigerated, ready-to-eat potentially hazardous food prepared in the food establishment and held for more than 24 hours must be marked with the date of preparation or consumption. Including the date of preparation, food shall be consumed within 7 days if stored at 41°F or less. Food that is frozen shall be marked to indicate the remaining days that the food may be kept once the product is thawed. DISCUSSED WITH STAFF. MUST DATE ALL REQUIRED ITEMS (SEE ABOVE). I WILL RECHECK ON THIS ON OR AROUND 12/11. ALL ITEMS DATED AT TIME OF INSPECTION WHERE DATE OF PREP COULD BE VERIFIED.

- Test strips on site.
- Digital stem thermometer on site. Not thin tip, but capable of accurately
taking temperature in comparison to Thermapen.
