    • Observations: VIOLATION OF SECTION 2-301.12 *PRIORITY* Food employees do not use the proper cleaning procedure for washing their hands, specifically: EMPLOYEE TALKED ON CELL PHONE AND RINSED HANDS IN 3-COMPARTMENT SINK FOR A FEW SECONDS AND DIPPED IN SANITIZER BASIN.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Food employees shall clean their hands by using a cleaning procedure of approximately 20 seconds that includes vigorous friction on the surfaces of the lathered fingers, finger tips, areas between the fingers, hands and arms for at least 10 to 15 seconds, followed by a thorough rinsing under clean, running warm water and a thorough drying. Action Taken: STOPPED EMPLOYEE AND HAD HER WASH HER HANDS. DISCUSSED WITH STAFF PROPER HANDWASHING PROCEDURE AND LOCATION TO WASH HANDS. ALSO DISCUSSED REMOVING GLOVES AND NOT WASHING GLOVES.
  • Floors, Absorbent Materials (0 point deduction). More info
    • Observations: VIOLATION OF SECTION 6-501.17 Absorbent materials are used on floors, specifically: CARDBOARD ON FLOOR IN MOBILE UNIT.
    • Correction: REQUIRED CORRECTION: Sawdust, wood shavings, granular salt, baked clay, diatomaceous earth, peanut shells or similar materials may not be used on floors. DO NOT USE ABSORBENT MATERIALS.
  • Outer Openings, Protected (0 point deduction). More info
    • Observations: VIOLATION OF SECTION 6-202.15(A)(D) Outer openings and windows in the establishment are not constructed or protected to prevent the entrance of insects and rodents, specifically: WINDOWS ON TOP OF UNIT NOT PROTECTED WITH SCREEN AND OPENED FOR AIR FLOW.
    • Correction: REQUIRED CORRECTION: Outer openings of the food establishment shall be protected against the entry of insects and rodents by: 1) Filling or closing holes and other gaps along floors, walls, and ceilings; 2) Closed, tight-fitting windows; and, 3) Solid, self-closing doors. Windows or doors used for ventilation must be protected by the use of screens, air curtains, or other effective means. PROVIDE PROPER SCREENS OR DO NOT USE WINDOWS.
  • Removing Waste, Mobile Food Units (0 point deduction). More info
    • Observations: VIOLATION OF SECTION 5-402.14 *PRIORITY FOUNDATION* Sewage and other liquid waste are not removed properly or at an approved location, specifically: WASTE WATER TANK DRIPPING AT TIME OF INSPECTION.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Sewage and other liquid wastes shall be removed from a mobile food unit at an approved waste servicing area or by a sewage transport vehicle in such a way that a public health hazard or nuisance is not created. A hand-carried waste transport container must be designed and intended to hold and transport gray water with leaks or spills and must have a capacity no greater than 20 gallons. Action Taken: TANK PROPERLY CLOSED AND NO LONGER LEAKING WASTE WATER ONTO GROUND.

restaurant at end of the day for proper cooling.
**Do not prepare food for the mobile unit in Sandy - the Sandy truck cannot
prepare food for this truck.
