    • Observations: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: ***Half and half out sitting on ice in service station 55F.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Potentially hazardous foods shall be maintained at 135°F or above (except roast beef may be held at 130°F (54°C) or above) or at 41°F or less. Action Taken: Chef discarded product. Filling out a time as control agreement today. ***Half and half and other PHFs to go out at 6:30AM and discrded at 10:30am.
  • Handwashing Sink Accessible (3 point deduction). More info
    • Observations: VIOLATION OF SECTION 5-205.11 *PRIORITY FOUNDATION* A handwashing sink is not accessible for employee use at all times, is used for purposes other than handwashing or is not operated properly, specifically: Hand washing sink in service area is blocked.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Handwashing sinks shall be accessible at all times for employee use and not used for other purposes. An automatic handwashing sink shall be used in accordance with manufacturer's instructions. Action Taken: Service stand and tray removed.
  • Equipment Food-Contact Surfaces Clean (3 point deduction). More info
    • Observations: VIOLATION OF SECTION 4-601.11(A) *PRIORITY FOUNDATION* Food-contact surfaces are not clean, specifically: **Clean slicer had cheese still on blade.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Action Taken: Corrected by cleaning.
  • Consumer Advisory (3 point deduction). More info
    • Observations: VIOLATION OF SECTION 3-603.11 *PRIORITY FOUNDATION* A consumer advisory is not provided, is not presented in the correct format, or does not contain the required information, specifically: ***On lunch and dinner menu - steaks, salmon and burgers all need notations (asterisk) and asterisk connecting it to the consumer advisory statement on the bottom of the menu.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. A facility that serves or sells animal foods raw, partially cooked or without otherwise being processed to eliminate pathogens either in a ready-to-eat form or as an ingredient in another ready-to-eat food shall inform consumers of the significantly increased risk of foodborne illness. The advisory must include a disclosure and reminder and can be provided using brochures, deli case or menu advisories, label statements, table tents, placards or other effective written means. The disclosure shall include a description of the animal derived foods such as "oysters on the half shell (raw oysters)" , "raw-egg Caesar salad" and "hamburgers (can be cooked to order)" or identification of the food by asterisking them to a footnote that state that the items are served raw or undercooked, or contain (or may contain) raw or undercooked ingredients.     • Observations: VIOLATION OF SECTION 2-401.11 *PRIORITY FOUNDATION* Food employees eat, drink or use tobacco in unapproved areas or use an inappropriate beverage container for drinking, specifically: Tea with lid and no straw in service area.
    • Correction: REQUIRED CORRECTION: CORRECT IMMEDIATELY. Employees shall eat, drink, or use any form of tobacco only in designated areas. Employees may drink only from covered beverage containers with a handle or straw in food preparation or utensil washing areas. Action Taken: Corrected bt removing.

I went over the employee illness policy with person in charge. Discussed
symptoms that require exclusion, and when the employee could safely return,
glove use with cuts on hands, and top 8 allergens and top 5 foodborne illnesses.
No pests observed at inspection.
